    Salad Doesn’t Have to be Boring!

    Salad doesn’t have to be boring, but most people think that a salad=no flavor and no fun! I have some great salad recipes and salad dressings that you can whip up in a matter of 10 minutes. You can pack them for lunch on the go or make them at home. I have salad almost every day for lunch and I never get sick of it! Get creative, use leftovers, and utilize pantry staples along with my fresh vegetables. Enjoy these quick and easy salad recipes for lunch!

    Sweet Potato and Kale Salad

    • 2 cups Lacinato (Dinosaur) Kale or other kale you enjoy

    • 1 cup other mixed greens, I love arugula

    • If you have any leftover cubed sweet potato, re-heat in a skillet with the kale

    • Feta cheese

    • Pistachios

    • Cherry tomatoes

    • English cucumber diced

    • Avocado or bacon 😊

    • Cooked Chicken, salmon, or canned sardines 😊

    • Dressing of choice: I like a lemon vinaigrette with this. You could also use a primal kitchen pre-made dressing or make a honey tahini dressing. I will add recipes at the bottom.

    Instructions:

    Chop the kale and sauté it quickly in some olive oil in a skillet with the lid on, until it’s a bit wilted and cooked down, about 5 minutes. Heat sweet potato in the same skillet.

    Add to a big bowl with other greens. Chop the pistachios with the feta, slice the tomatoes, and add ½ an avocado or 1-2 pieces of cooked bacon, plus your protein and dressing! Done!

    Salad Dressing Recipes

    Lemon vinaigrette:

    ¼ cup Fresh lemon juice, 1 small garlic clove, minced, 1 tsp Dijon mustard, ¼ tsp salt, pepper, ½ tsp honey (optional), ¼ cup extra virgin olive oil

    Mix well, and store in a mason jar.

    Tahini Dressing:

    ¼ cup creamy tahini, ¼ cup. Olive oil, 1 lemon juiced, 1 tbsp. honey, ½ tsp sea salt, and pepper, 2-3 tbsp. water to thin if it’s too thick. Mix well, and store in a mason jar.

    Apple Cider Vinaigrette:

    1/3 cup olive oil, ¼ cup apple cider vinegar, 1 tbsp. honey, 1 tsp Dijon mustard, 1 garlic clove minced, salt and pepper to taste. Mix well, and store in Mason Jar

    For a good quality, clean-ingredient salad dressing look for Primal Kitchen brand salad dressing at your local grocer.

    Pear and Endive with Blue Cheese

    • 1 pear thinly sliced

    • 2-3 heads of endive, sliced in half

    • ¼ cup pecans, chopped

    • 2-3 tbsp. crumbled blue cheese

    • Lemon vinaigrette

    • Add protein of choice

    Arugula Salad with Lemon Vinaigrette

    • 2-3 cups of baby arugula

    • 2-3 tbsp. fresh parmesan cheese, shaved

    • ¼ c. Red onion, sliced

    • Lemon vinaigrette

    I love having this salad with my breakfast! It’s a great way to get some greens in and it tastes great with eggs!

    Beet and Goat Cheese Salad

    • Red beets (you can buy these pre-cooked or you can roast them yourself), cut into small cubes-if you are roasting: peel beets, toss in avocado oil salt, and pepper, and roast on a sheet pan at 425 degrees for 15-20 minutes until tender.

    • 2-3 cups of Arugula, kale, spinach, or other mixed greens you like

    • 2 tbsp. soft goat cheese

    • 2 tbsp pistachios, chopped

    • Chopped Persian cucumbers

    • ½ diced granny smith or another tart apple

    • Apple cider vinegar dressing
