    Gluten-Free, Dairy-Free Buffalo Chicken Dip

    Fall Food that's healthy? Enter this gluten-free, dairy-free Buffalo Chicken Dip


    It's fall and football has begun. You may be craving all the unhealthy football snack foods, but it doesn't all have to be healthy!

    If you are looking for the perfect dish for your next gathering, you must try my gluten-free, dairy-free buffalo chicken dip! It is so good that no one will know it's "healthy". It's allergen-friendly, and fairly guilt-free! So Dig in!


    Ingredients:

    ● 1 Rotisserie Chicken, shredded

    ● 1/2 medium onion chopped

    ● 2 cloves garlic minced

    ● 1 Tbsp grass-fed butter or olive oil

    ● 2/3 cup homemade mayo or purchased paleo mayo (Primal Kitchen or Sir Kensington’s avocado mayo is what I use)

    ● 2/3 cup coconut cream or Goat Cheese (room temperature). I prefer the goat cheese it mimicks the flavor of cream cheese. If you use coconut cream make sure it is the canned variety.

    ● 1 tbsp brown mustard (sugar-free)

    ● 1 tsp garlic powder

    ● 1 tsp onion powder

    ● 1 tsp dried dill

    ● 1/2 tsp smoked paprika

    ● 1/3 cup Franks Red Hot Original

    ● 1 1/2 Tbsp fresh lemon juice

    Instructions

    1. heat a small skillet over medium heat and add the butter. Sautée the onions until soft, then add the garlic and cook, stirring until just softened. Remove from heat and set aside.

    2. In a large mixing bowl, whisk together the mayo, coconut cream or goat cheese, mustard, garlic powder, onion powder, dill, paprika, hot sauce, and lemon juice until smooth. Shred your chicken, then add to the mixture along with the cooked onions and garlic.

    3. Stir to combine, then transfer to a small casserole dish and bake in the preheated oven (350) for 20-25 minutes until the outer edges bubble and dip is heated through. Serve warm with veggies, seed crackers, or homemade plantain chips, or over a baked potato or sweet potato for a meal.
