Curried Chicken Salad: Delicious, Fast, and Easy Lunch Prep Recipe


· 1 rotisserie chicken, peeled, diced and cooled

· 1/2 cup avocado oil mayo* (I like Primal Kitchen Brand)

· 4 stalks of celery, diced

· 1/4 cup green or red grapes, halved

· 1/4 cup cashews or other nut you enjoy, roughly chopped

· 2 tablespoons curry powder (more or less depending on your taste)

· 1/2 teaspoon salt

· 1/4 teaspoon turmeric

· Freshly cracked black pepper

· 3 green onions, diced

· cilantro to taste, roughly chopped


1. Place all ingredients in a large bowl.

2. Mix to combine.

3. Keep in the fridge to cool and help the flavors meld together!

4. Serve with almond flour crackers, plantain chips, or on a salad!

Enjoy this super easy lunch prep recipe! I recommend you make a batch for 3 days! Of course, you can make more or less depending on your meal plan needs!


*These measurements are totally up to you. I like my chicken salad pretty creamy. You can always add more or less with these ingredients to fit your preference.
